Course Content Overview

Where was the first form of a cocktail invented? Why are cocktails called that? Did these drinks ever represent more than a pleasurable refreshment? We'll trace the history of drinks from ancient times up until today and reveal how tastes and consumption have gone changing over time.

We'll start by analysing original punch recipes that date back to the 16th century. 

Some recipes we'll cover are the Philadelphia Fish House Punch and the classic Milk Punch. 

We'll teach you to prepare any product you could ever need to incorporate into a cocktail.

Find out what it takes to make a cocktail taste absolutely perfect. You’ll learn the different methods, techniques, and types of equipment required to make flawless drinks. You will practise: double shaking, double stirring, throwing, rolling, and more advanced techniques.

In these ten days, you will taste over 40 cocktails. Every family, every century - you'll try it. That's the only way to get an overarching view of as many flavour combinations as possible. Understanding what exists and how the ingredients pair together is crucial for later developing your own signature mixes. You will leave this course with the ultimate palate, having savoured the rarest of drinks the majority of the planet has never heard of. This knowledge will be your secret weapon when it comes to inspiration for innovative creations.

You’ll study ice as a vital component of a drink. You'll understand:

  • The purpose & necessary quantity of ice
  • How to use ice to change the dynamics of a drink
  • The effect of different types & shapes of ice
  • The purpose of different ice carving tools
  • How to shape ice cubes, balls, and carvings using a knife or ice pick

Tiki creations are a crucial and fascinating (not to mention colourful!) branch of cocktail culture. You'll learn about:

  • Polynesian art, architecture, lifestyle
  • Classic tiki cocktails
  • The heroes of tiki
  • Making your own rum blends

 

Here we'll work on creating well-balanced bespoke cocktails. How? 

  • Understand every aspect that goes into the research and development of a drink
  • Develop your palate with a systematic approach to identifying flavours
  • Design your own workflow for creating original recipes by connecting ingredients, using modifiers, and learning the importance of glassware, ice, and decoration to impress guests with unexpected tastes. 

During the course, a known industry expert will either come to deliver a seminar onsite or close off their bar and give you an exclusive behind-the-scenes insight. We have privileged access to the World's 50 Best Bars - e.g. Giacomo Giannotti's Paradiso in Barcelona - so bring a pen and notepad as our contacts are sure to share their secrets to opening world-class venues.

This challenge will give you a taste of how many international cocktail competitions work. The Mystery Box will test your mixing skills, requiring you to conjure up a well-balanced cocktail from a box of assorted ingredients. You'll have to think on your feet and call upon the copious cocktail knowledge you've developed over the ten days.
